Ingredients
  

  • 2 cups gluten-free flour
  • 1/2 cup granulated sugar
  • 1/2 cup powered sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup melted butter, room temp

Instructions
 

  • Combine all ingredients into a bowl and mix well
  • Place the dough in plastic warp formed into log shape
  • Refrigerate for 2 hours
  • Preheat oven 350 degrees
  • Cut dough into 1/2 inch pieces
  • Place on a greased foil lined baking sheet about a inch apart
  • Bake for about 12 to 14 minutes
  • Cool completely before serving.

  • To make lemon shortbread add zest of one lemon to dough mixture. Optional: a few drops of lemon extract.
  • To make chocolate chip shortbread cookies, add 1/4 cup mini chocolate chips to dough mixture.
  • To make almond shortbread cookies, add 1/4 cup chopped almonds to dough mixture. Optional: a few drops of almond extract.
