Gluten-Free Shortbread Cookies

Ingredients
  

  • 2 cups gluten-free flour
  • 1/2 cup granulated sugar
  • 1/2 cup powered sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup melted butter, room temp

Method
 

  1. Combine all ingredients into a bowl and mix well
  2. Place the dough in plastic warp formed into log shape
  3. Refrigerate for 2 hours
  4. Preheat oven 350 degrees
  5. Cut dough into 1/2 inch pieces
  6. Place on a greased foil lined baking sheet about a inch apart
  7. Bake for about 12 to 14 minutes
  8. Cool completely before serving.

  11. To make lemon shortbread add zest of one lemon to dough mixture. Optional: a few drops of lemon extract.
  12. To make chocolate chip shortbread cookies, add 1/4 cup mini chocolate chips to dough mixture.
  13. To make almond shortbread cookies, add 1/4 cup chopped almonds to dough mixture. Optional: a few drops of almond extract.
