Gluten-free Shortbread Cookies – Including 3 Variations

Therefore, in todays recipe I am sharing the basic gluten-free shortbread cookie recipe and also three different varieties to try with them. With adding just one simple ingredient to jazz up this little cookie.

Baking has, at all times, been a stress reliever for me. When I’m feeling overcome with worry, there’s not anything that pacifies me more than baking an enjoyable gluten-free delicacy.
But baking doesn’t have to be time-consuming. There are oodles of recipes that won’t take up half a day. And still, give you that stress-free feel – and makes you happy about what you achieved.
These gluten-free shortbread cookies are one of those simple recipes. The base recipe necessitates only six ingredients and around 5 minutes to throw together. It’s effortless! And while this is an excellent any-day cookie recipe, right now, I’m giving you three different flavor combos that are impeccable for any occasion.
The Ingredients of gluten-free shortbread cookies
2 cup gluten-free flour
1/2 cup sugar
1/2 cup powdered sugar
1/2 tsp salt
1 tsp vanilla
1 cup melted room temperature butter

By using King Arthurs measure for measure gluten-free flour it is a great flour blend to substitute for wheat flour. It contains xanthan gum which is good for holding things together. Xanthan gum is a thickener and stabilizer to prevent ingredients from separating. This flour is also a good choice because it comes fortified with iron, calcium and vitamin B.
Gluten-free flour has come a long way since we started our gluten-free diet. It makes it so much easier then having to track down and buy different flours to blend on your own. No more guessing and that saves time and energy.
Instructions to make gluten-free shortbread cookies
- Put all of the cookie ingredients in a big bowl, and mix to combine well.
- Mix till all the dry ingredients are saturated with the butter. And then mix the dough until it makes a nice consistency.
- Put the dough on a big piece of plastic wrap and wrap tight into a log shape.
- Put in the fridge to cool for around 2 hours. Take out from the refrigerator and cut into half inch pieces.
- Heat your oven to 350°F. Cover a big baking sheet with foil and grease it.
- Put the cookies around 1-inch apart from each other on the arranged baking sheet. Put in the middle of the heated oven and bake for about 12-14 minutes.
- Take out from the oven and let to cool on the baking sheet for 5 minutes before moving to a wire rack to cool totally.
Your gluten-free shortbread cookies are ready to devour! But, here are three other ways you can add a bit of flavor!
Starting with the plain gluten-free shortbread recipe just add one of these ingredients below.
1. Lemon with lemon zest
Lemon gluten-free shortbread is made with lemon zest. The addition of lemon zest makes them mouthwatering! And a welcome variation from all of the chocolate, peanut butter, or buttercream cookies and confectioneries we usually eat! You could also add a few drops of lemon extract if you want a stronger lemon flavor.
To make the lemon shortbread version – add the zest of one lemon to the recipe. Get the best zest with this lemon zester.
2. Chocolate Chip
Just put in mini chocolate chips to the dough mixture for the chocolate chip version. You will get the perfect chocolatey taste in these cookies! A treat for the kids! Every mouthful is full of sweet, terrific shortbread, crammed with loads of chocolate chips.
To make the chocolate chip version – add 1/4 cup mini chocolate chips to recipe.
3. Almonds
You could also use almonds. I chopped my almonds and added them to the dough mixture. Cookies made with chopped almonds will give it a nice texture with the almond pieces throughout. You could add a few drops of almond extract if you would like a stronger almond taste.
To make the almond version – add 1/4 cup chopped almonds to the recipe.
Tips for Making Homemade Gluten-Free Shortbread Cookies
- Cool the dough for at least 2 hours and then portion, even if you don’t want to bake immediately. If you chill the dough excessively, the cookie dough inclines to powder when you slice it.
- If you don’t want to bake straightaway, cut the cookies as specified in the guidelines and freeze the dough. Put it away in a freezer bag until you bake them.
- Using powered sugar helps to keep the gluten-free dough hydrated and form the dough better.
How to store your shortbread cookies
Short term you can display them on a cookie tray in the kitchen the day you bake them or the day you put them out for a special occasion. For long term, if you have any cookies left, you can put them in a ziplock bag or a plastic container in the fridge for about a week. You could store them in the freezer for a few months too, if you need longer storage time.

Ingredients
- 2 cups gluten-free flour
- 1/2 cup granulated sugar
- 1/2 cup powered sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup melted butter, room temp
Instructions
- Combine all ingredients into a bowl and mix well
- Place the dough in plastic warp formed into log shape
- Refrigerate for 2 hours
- Preheat oven 350 degrees
- Cut dough into 1/2 inch pieces
- Place on a greased foil lined baking sheet about a inch apart
- Bake for about 12 to 14 minutes
- Cool completely before serving.
