I’ve had friends eat them and they were shocked to find out that they were gluten free. I always love to see my friends and family enjoying the gluten-free food that I make. It is such a pleasure knowing that I can make delicious food not just for my daughter with celiac disease to enjoy but everyone else too.
Gluten-Free Cheese Its
For these gluten-free cheese its I used Bob’s Red Mill gluten free all purpose baking flour.
For the mixing part my Cuisinart food processor did the job.
This is the Cuisinart food processor that I used to make this recipe.
Making the Gluten-Free Cheese Its:
First you want to put the shredded cheddar cheese, gluten-free flour, garlic and butter into the processor to blend together. You want to make sure the butter is cold. This will help make the crackers more flaky and delicious. Just slice it up and toss it in from the fridge. Put all the ingredients in. Pulse them a few times so they are broken up into smaller pieces and combined together well.
Starting the cheese it dough
After it is blended start adding cold water in, one spoonful at a time. You will see a dough ball start to form. By adding one tablespoon of cold water at a time it helps form the dough ball.
The dough will come together in a ball. It will be a little sticky at this point but that’s okay. When you wrap them up and put in the refrigerator it will help them set up a bit.
Store in fridge for about an hour
Separate into 2 balls of dough and set in the refrigerator for about an hour. Separating the dough will help make it more manageable to work with in smaller portions when you get ready to roll it out. Plus, having it get cold makes it easier to work with after its been sitting in the fridge for a while.
Rolling the dough
After that spread some more of the gluten-free flour on the counter and roll it out with a rolling pin. Spreading some gluten-free flour on the counter and the rolling pin will help it not to stick. Add more as needed as you go along rolling and cutting. Roll the dough to about a 1/4 inch thickness.

Making the cheese its
Pre-heat your oven to 350 degrees.
Cut the dough into about 1 inch by 1 inch squares with a knife and place onto a silicone baking mat sitting in a baking sheet. Learning from a mistake I made. Make sure the silicone mat is on the baking sheet first because it’s super hard to lift it up after the crackers are placed on it. It is flimsy and they moved all around.
You can poke holes in the middle to give it that Cheese it look. I used a wooden skewer. Also, don’t forget to sprinkle some salt on top before they go in the oven.
I recommend that you use a silicone baking mat for these. They are so small and so many of them that you will be happy that you did.
The Finished Gluten-Free Cheese It!
Here you see them added to a bowl for everyone to share. They don’t last long.
As you can see they look delicious! They really look like the real thing too!
The kids already snatched them up! I make a big batch so there’s for sure some left over to pack for school snacks. Its great when my daughter comes home from school. She can just grab them and go. They are great to take to the park when you have the littles in tow. Its a quick easy snack they can pick at. You could pair it up with apples to make it an even healthier snack.
Make sure to store them in the fridge in a zip lock bag or a sealed tight Tupperware container.

Gluten Free Cheese It's
Ingredients
- 2 cups Gluten Free Flour
- 2 1/2 cups Shredded Cheddar Cheese
- 8 tbsp Butter
- 1/4 tsp Garlic Powder
- 8 tbsp Cold Water
- Salt for sprinkling on the top
Instructions
- Pre-heat oven to 350 degrees.
- Add gluten free flour, shredded cheddar cheese, sliced butter, and garlic powder to food processor.
- Pulse the ingredients together.
- Slowly add each tablespoon of water into the food processor. Mixing with each spoonful added.
- Gather dough when all incorporated and form into two balls.
- Wrap with plastic wrap and sit in fridge for one hour.
- Sprinkle gluten free flour on counter and roll out dough 1/4 inch thick.
- Cut into one inch squares and poke a hole in the middle.
- Lay them out on a silicone baking mat on top a baking sheet.
- Bake at 350 degrees. 12 to 15 minutes or until golden.
- Enjoy!
