Gluten-Free Banana Pancakes
Lets talk about this for a minute. How great is it to add 2 breakfast staples together to get a delicious healthy meal in the morning. Bananas and pancakes. By simply adding a mashed up banana to Bisquick gluten-free pancake mix you get banana pancakes. Yum!
My style on gluten-free cooking/baking is to make it simple and keep it tasting like its not gluten-free. I use to go crazy in the beginning buying lots of different fancy flours and some premade gluten-free food. We didn’t like it very much. So I realized by keeping it simple, it tasted better.
It’s funny, every time I make these banana pancakes I always think of that song by Jack Johnson called Banana Pancakes.
Banana
I also like to make these because its a great way to incorporate fruit into your day. If you have a picky eater in the family.
Bananas are naturally gluten-free so that’s good. They are also full of potassium, vitamins and fiber.
You can also use the banana peel for the compost pile too, if you have one.
Supplies
You only need a few things to make these banana pancakes. A box of gluten-free Bisquick pancake mix, banana, egg, milk, vegetable oil, a little butter for the pan. To prepare them you will need a bowl, masher, measuring spoon, measuring cup, cast iron pan, and a pancake flipper.
Time to eat
A great addition to my gluten-free banana pancakes is my homemade maple syrup.
You don’t have to use maple syrup. There are other toppings you can use. I like to add pecans and honey to mine sometimes. Adding more fresh bananas or other fruit on top is yummy too. There are lots of different flavor syrups at the store today. Just make sure you read the labels that they are gluten-free. I can’t believe the places that I find it in.

Gluten-Free Banana Pancakes
Equipment
- cast iron pan
- pancake flipper
- masher
- measuring cup
- stainless steal bowl
- measuring spoon
Ingredients
- 1 banana
- 1 cup milk
- 1 egg
- 2 tbsp vegetable oil
- 1 cup gluten-free bisquick pancake mix
- 1 tbsp butter
Instructions
- Mix all wet ingredients together
- add in pancake mix, mix all ingredients together
- heat 1 tbsp butter in cast iron pan, medium heat
- spoon mixture into pan
- cook for a few minutes until bubbly on medium heat, flip and cook for a couple more minutes
- serve with butter and maple syrup!
- Enjoy!!
