Easy Pickle Recipe

Create these amazing simple easy pickle recipe today! You only need a few ingredients to have fresh, crisp, delicious homemade pickles.

These are a definite winner at any picnic. Everyone never believes that I made these pickles. They are so easy and I always share this recipe after someone has tried them. You won’t buy store bought pickles again.

Cucumbers

This year I decided to try and grow some pickling cucumbers myself in my garden. This is totally optional. You can also pick up some firm cucumbers in the grocery store and they will work just fine too.

This is a picture of the early stage of their growth.

I had lots of plants going, that way I would have lots of pickles and I could share my them with friends.

 

They are almost ready

Here you see the cucumbers are almost ready to pick, they just have to get a little bigger. You can see the progress of me growing my own cucumbers in my YouTube video below.

It was fun growing this variety of cucumbers this year.

One of the problems I did face this year was some of cucumbers turned a little yellow in color and I think it had to be because we had a very dry summer.

 

What you need

To make your pickles you will need:

  • Pickling cucumbers
  • Canning Jars
  • Salt
  • Water
  • White Vinegar
  • Dill
  • Garlic

 

How to make the pickles

To begin, grab a pot to start to make the brine. You are going to add 2 cups of water and 2 cups of white vinegar to the pot. Then add 3 tablespoons of salt and 1/2 teaspoon of sugar.

On medium high heat, stir the contents until they have dissolved all the way. After it has dissolved, take off the heat and let the brine cool down.

Cut your cucumbers into spears. Put a few sprigs of dill in each jar as well as a few cloves of garlic. Stuff the jar with the cucumber spears. After, they are full, fill the jar with the brine you made. Use your wide mouth funnel to help pour it into the jars.

Just a note about this recipe. I do not water bath these pickles for long term storage. These are just quick fridge pickles.

Put the lids on all the jars and store in the fridge for a day or two before eating, that way they have time to soak in the brine and all the flavors in the jar.

Then eat, share and enjoy!

 

Canning them

Here you can see I have the jars all ready to be stored in the fridge. The brine is filled to the top and all the air bubbles have been removed.

These pickles will last in the fridge for a few weeks to a month. If they last that long. Everyone in my house eats them faster then I can make them.

They are equally yummy too! I love to make a variety or spears and chips. The spears you can eat easily. The chips you can add to burgers, sandwiches and salads.

In the past I have also put a cute little ribbon on the lid and shared with friends as little gifts.

Ingredients Equipment Method

Ingredients
  

  • 2 cups water
  • 2 cups white vinegar
  • 3 tbsp salt
  • 1/2 tsp sugar
  • 1 dill bunch
  • 10 garlic cloves

Equipment

  • 1 Stainless steel pot
  • 1 Knife
  • 1 Cutting Board
  • 1 measuring cup
  • 1 measuring spoon
  • 1 wide mouth funnel
  • 5 ball canning jars

Method
 

  1. Add the water, vinegar, salt and sugar to a pot on medium heat. Heat until dissolved. Let cool down
  2. Add dill sprigs and garlic cloves to jars.
  3. Cut cucumbers into spears
  4. Add cucumber spears to jar, fill with brine. cover all the way. stir to get rid of air bubbles. Put lid on
  5. Store in fridge for a da or two before eating.
