Simple Roasted Lemon Chicken (Gluten-Free)

This simple, easy, cheap and gluten-free meal is one we cook often. It also is a meal that keeps on giving. The left over chicken is even more amazing the next day. I make a gluten-free gravy from the drippings and also use all the bones and scraps to make a classic chicken broth. Don’t forget to save the wish bone to make a wish after dinner. Its a little family tradition that I did with my mom and now I do it with my kids. Options are limitless with this chicken. It’s so versatile. Add it to your weekly dinner schedule.

A few years ago when my oldest daughter was diagnosed with celiac disease we needed to change her diet. I started to make more homemade wholesome food. It was hard to eat out and buy food because it was hard to make sure it was gluten-free. I started to make bone broth to cook with. I could control how the bone broth was made. Bone broth also has the added benefit of helping her gut heal from all the damage that was done by the gluten she had eaten. It really is so simple to make and has great health benefits.

Have you ever wondered how we get maple syrup?

I’m happy that I live in an area of New York where I am able to make this sweet treat happen in my own back yard. I only tap one tree in my yard. It’s a small operation but it’s just enough for the kids. The kids get involved and learn about the maple syrup process.

I learned how to tap a maple tree a couple of years ago at a local farm. I was so excited to try it at home. The funny thing is we only have one maple tree. Go figure! Anyways, we still proceeded. At my amazement, we tapped the tree and it worked! We had maple sap flowing in no time.

We love crafting and when I found out that we could recycle some of the plastic food containers to make homemade Shrinky-dinks it was a double win.

When I was younger I remember making Shrinky-dinks. So, it was nostalgic to make them again with my girls. All you need is a few household items to get started and the possibilities are endless.

We made a Shrinky-dink necklace.

So, your probably asking how do you make Shrinky-dinks with recycled plastic?

1- Get a #6 plastic container and clean it.

2- Make a design with sharpies.

3. Cut it out and place on baking sheet.

4. Bake at 300 degrees for 5 to 10 minutes or until shrunk and flat.

5. Enjoy your homemade Shrinky-dinks.

After I had my third daughter I knew she was going to be my last and I wanted to really make something memorable. So, I decided to save all her clothes from her first year to make her a baby’s first year clothing quilt keepsake. Yes, you read that right. All her baby clothes from birth to one year!

Sewing and crocheting are my hobby.  I wanted to make her quilt to be a keepsake and something that will be saved and passed on down through the generations. I really love how the quilt turned out. However, This was a challenge for me. Never had made a quilt before. I self taught myself every step of the way. Over coming that and the results are something that will last a lifetime. The process was long. Taking a few hours here and there to finish it. But of course there was no rush, I’m just glad it got done. I store it in her room either displayed on her crib or hanging over the rocking chair.
