Gluten-Free Gravy

The topping to finish your dinner wouldn’t be complete without this luscious gluten-free gravy. From using the drippings from the Simple Roasted Lemon Chicken recipe. The secret is to use Bob’s Red Mill 1 to 1 baking gluten-free flour. My family and guests never know they are missing the gluten from traditional flour used to make a roux to thicken this gravy. So full of flavor, my kids beg for more gravy.

I’m always trying to reinvent the meals I use to create in a gluten-free way. Cooking gluten-free has definitely been a learning curve for sure. It saddens me to see my daughter not be able to eat like we use too. (Especially bread!) If your on a gluten-free diet you know what I’m talking about. I try my best efforts to make everything so we can all eat the same things together and not feel like we are lacking in the food quality department.

Gluten-Free Gravy

To get the best results for this gluten-free gravy, use Bob’s Red Mill 1 to 1 baking gluten-free flour. The secret of this flour is to thicken like traditional flour with the ingredients potato starch , tapioca flour and xanthan gum. Xanthan gum is a great alternative thickening agent for gluten-free cooking. It is an effective thickening agent and stabilizer to prevent ingredients from separating. The combination of these make for a great thickener. Since we are missing the “glue” or gluten from wheat flour.

 

The ingredients in Bob’s Red Mill 1 to 1 Gluten-Free baking flour. It contains, sweet white rice flour, whole grain brown rice flour, potato starch, whole grain sorghum flour, tapioca flour, and xanthan gum.

 

Gluten-Free Gravy

For this gravy I used the dripping from my simple roasted lemon chicken. It contains extra virgin olive oil, Montreal chicken seasoning, juice from a whole lemon and all the delicious roasted chicken juices. I separated the chicken from all the juice. Placing the chicken on a separate plate.

Before we start eating I always try and salvage the wish bone for the kids. Sometimes its breaks during cooking but if it doesn’t, I clean all the meat off, wash it and set it out to dry so later they can make a wish. My mom used to save the wish bone for me and my sister when we were little, now I do it for my kids.

To start the gravy, set your stove to a medium high heat.

As you will see in the video below, I started by adding a few tablespoons of butter to the sauce pan. Melting it down.  Adding in a few tablespoons of the Bob’s Red Mill 1 to 1 gluten-free baking flour.

While cooking and whisking together over a medium to high heat until starts to get bubbly and golden brown. Congrats, You just made a roux! A roux (pronounced “roo”) by definition is a mixture of equal parts fat (especially butter) and flour used in making sauces. In this case were using it to make gravy.

After the roux is all bubbly and golden brown, you want to add your drippings from the chicken. I used a strainer attached to the top of the pot to catch any chunks from going in. Add it in quick and turn your heat up high to bring to a boil for a minute or two all while whisking at the same time. You don’t want lumpy gravy. This is when it will get thick. Then turn off the stove, pour into a gravy boat and serve with dinner.

Look at this! With the drippings from the simple roasted lemon chicken you really get added great flavor from all the seasoning and lemon juice. Pour on the goodness!

Please note that you can make this gluten-free gravy with any other drippings you have prepared for dinner. Other options that work well with this gravy recipe for instance is a beef pot roast or a roasted leg of lamb.  I just so happened to make it with my roasted lemon chicken.

In the end, while in the making of this post the children were around playing.  Somehow a doll got attached to this photo shoot. No baby dolls were hurt during this filming. 🙂

Ingredients Method

Ingredients
  

  • 2-3 tbsp butter
  • 2-3 tbsp Bob's Red Mill 1 to1 Baking Gluten Free Flour
  • drippings from roasted chicken
  • pinch salt and pepper

Method
 

  1. Melt butter in pan
  2. Add flour and whisk till blended over medium to high heat
  3. Cook a few minutes until bubbly and golden brown
  4. Add the drippings from your roasted chicken
  5. Bring to a boil while mixing for a minute
  6. Add to a gravy boat and serve
