Gluten-Free Chocolate Truffle Lava Cake

Actually, this gluten-free chocolate truffle lava cake can be made made any time, not just for Valentines.
I noticed the kids really liked it too. These did not last long. Funny story, but not really funny was George found an empty plate in the fridge. (Not uncommon with the kids but anyways) they ate them all! I have to admit, I ate a few too.

I’ve always liked the chocolate lava cake. It’s something kind of special about it. I wanted to recreate that in a gluten-free way but also in my own way.
So, I came up with this idea in my head and I hoped it would work. I did a practice run of the recipe to see if it would work. Furthermore, I mean “work” by cutting it open and seeing the “lava” flow. I was pleasantly surprised to see it did work. A little less conventional but it does it job. It still gave me the wow factor!

What you need to make these cakes
Star of the show is the Lindt dark chocolate truffles. Bobs Red Mill quinoa flour, some brown and white sugar. Baking powder and baking soda help with the rising of the quinoa flour. The usual salt, eggs, water and vegetable oil. And don’t forget the cocoa powder!
Bake
I noticed with this recipe. I’ve tried it both ways. Grease the silicon baking molds. It does make a difference for the better. Go ahead and set the oven for 375 degrees f. You want to bake them for 25 minutes.
After you bake them the trick is to cut the bottoms off in a conical shape to stuff the Lindt truffles in the middle of the cakes and then place the cake back on top. While they are still hot, it will melt the truffle so when you plate them and cut into them they will ooze the chocolate truffle lava!
Carefully get the cakes out of the silicone molds and plate them with some whip cream. Then, cut into them revealing the liquid centers and enjoy!

Gluten-Free Chocolate Truffle Lava Cake
Ingredients
- 2 cups quinoa flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup cocoa powder
- 2 eggs
- 1/4 cup vegetable oil
- 1 cup water
- 8 Lindt dark chocolate truffles
Instructions
- Mix all dry ingredients together
- Add all wet ingredients, mix together
- Preheat oven to 375 degrees F
- Grease silicon baking molds
- Add batter to silicon baking molds
- Bake for 25 minutes
- After cakes are baked, take out of oven, cut bottom of cake off and stick Lindt truffle in the middle of cake, replace top of cake back on. That way truffles will melt to resemble a lava cake.
- Let cook a few minutes or serve immediately. Pop out of molds, place on plate and cut open to reveal melted truffle.
- Add whipped cream and powdered sugar if desired.
- Serve and enjoy!
